When it comes to Selena Quintanilla, every detail of her life continues to feel special. Her music, fashion, iconic smile, and even her go-to red lipstick. But let's talk about her taste in food because nothing brings people together quite like a shared love for a good plate of Tex-Mex.

The team from Telemundo's Hoy Día recently made their way to HI-HO Restaurant in Corpus Christi, Texas, a humble spot that holds a very sweet claim to fame: it was one of Selena's go-to places to eat. And let's be real: if it was good enough for the Queen of Tex-Mex, it's good enough for the rest of us.

What did Selena order at HI-HO?

Chalupas. But in the hands of a good cook, chalupas are next-level. Crispy, satisfying, and loaded with flavor, just like Selena's music.

Locals say she would order chalupas often, and honestly, once you try them, you get it. There's just something about that crispy tortilla, the refried beans, the toppings, it's Tex-Mex comfort food at its finest.

How to make classic Tex-Mex chalupas at home

Chalupas are all about that crispy shell and flavorful toppings. Here's a super easy recipe to make you feel like you're sitting next to Selena.

Ingredients:

  • Corn tortillas (6-inch)
  • Refried beans (homemade or canned)
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheddar cheese
  • Sour cream (optional but highly recommended)
  • Salsa or hot sauce (because spice is life)
  • Vegetable oil (for frying)

Optional toppings:

  1. Guacamole
  2. Sliced jalapeños
  3. Ground beef or shredded chicken, if you want a protein boost

Instructions:

  • Heat the oil: Pour enough oil to cover the bottom of a large skillet (about ½ inches). Heat on medium-high until hot but not smoking.
  • Fry the tortillas: Carefully place one tortilla at a time into the oil. Fry until golden and crispy, about 1–2 minutes per side. Drain on paper towels. You want them firm enough to hold toppings, but not so hard that you break a tooth.
  • Warm the beans: Heat your refried beans in a pan or microwave. Spread a generous layer over each fried tortilla.
  • Load it up: Top with shredded lettuce, diced tomatoes, and a hefty sprinkle of cheddar cheese. If you're feeling fancy, add sour cream, salsa, or guac.
