Scrambled Eggs with Truffle

Scrambled eggs with sliced fresh black truffles
Ingredients
  • 2 tbsp butter
  • 15 g white or black truffle (1 small truffle)
  • 4 eggs
  • 2 tbsp milk
Preparations
  • Take white truffles and thinly slice them with a truffle slicer. Then gently chop the slices. 
  • In a medium saucepan, add butter and truffles, allow for the butter to melt and soak in the truffle flavor.
  •  In a small bowl, whisk together your eggs and milk.
  • While cooking on low heat, add egg and milk mixture to butter and truffle mixture. Stir until thick, then while still stirring, remove eggs from heat and continue to stir for about 15 seconds. 
  • Return to heat and continue stirring for about another 30 seconds.
  •  Repeat until you get thick and creamy eggs.
  • Add salt and pepper to taste.

Mid-Morning Snack: A Quick Pick-Me-Up

According to Glamour México, Carolina reaches for a handful of almonds when mid-morning hunger strikes. On days she craves something juicier, she opts for a piece of fiber-rich fruit, such as an apple or a few strawberries.

 Lunch: Keeping It Light and Fresh

Lunch is a simple yet satisfying affair. Carolina typically enjoys a green salad loaded with tomatoes, cucumber, and avocado, topped with a lean protein like grilled chicken or salmon. A drizzle of extra virgin olive oil and balsamic vinegar ties it all together.
